Bake Time: Signature Oatmeal Cranberry Cookies

THIS, my friends, is my go-to recipe when I don't have a clue what to bake. I came up with this recipe back at the beginning of high school and I have yet to meet someone who doesn't like these. Even one of my high school gym teachers told me that I should market them! Hope you enjoy!

P.S. Considering this is my signature cookie, I'm leaving out some "secret" ingredients, but have no fear, it's only a few pinches of this and that :)

P.P.S. I'm in the process of making a healthier version of this recipe, too, so stay tuned!

Oatmeal Cranberry Cookies

INGREDIENTS:
1 cup unsalted butter
3/4 cup granulated sugar
3/4 cup light brown sugar
2 eggs
1 tsp. pure vanilla extract
1 1/2 cups flour
1/2 tsp. salt
1 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cardamom
3 cups rolled oats
1 1/3 cups dried cranberries

DIRECTIONS:
Preheat oven to 350 degrees. Cream butter and both sugars until fluffy. Slowly add eggs and vanilla to butter/sugar mixture. Combine all dry ingredients in a separate bowl. Add butter/sugar mixture to dry ingredients and stir well until blended. Coat cranberries lightly in flour. Add to mixture. Drop mounded teaspoonfuls onto parchment covered baking sheet and bake for 10-12 minutes, or until lightly golden. Let cool for a few minutes and enjoy!

SIDE NOTE: These cookies are sort of like snowflakes. No batch ever comes out looking like the other so don't worry if they look a bit different each time you make them! They'll still be just as delicious :)
